『Functional foods in the past, present and future』
Diet has a pivotal role in not only host homeostasis but also three types of functions. This indicates that the primary function is "nutrition", the secondary function is "preference", so-called deliciousness, and the tertiary function is "physiological function". This tertiary function is the functionality of foods that have been recently taken up a lot. In this lecture, I will explain the functions of food as well as their characteristics and interaction with gut microbiota.
